Cream Cheese Apple Crisp

You may recall that my hubby and I recently went apple picking. 
You can see those photos here
I wanted to find a recipe that was out-of-the-ordinary, 
something that was jazzed up a bit. 
The result was Cream Cheese Apple Crisp
much to the delight of my family, 
who dubbed it a "keeper"!

Cream Cheese Apple Crisp

TOPPING
1 1/2 cups quick-cooking oatmeal

1 1/3 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons ground cinnamon
3/4 cup butter, chilled, cut up

APPLES
6 cups peeled chopped apples (1/2 inch) (4 large apples)
1/3 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
 
FILLING
1 (8-oz.) pkg. cream cheese, softened
1/2 cup sugar
2 eggs
2 tablespoons all-purpose flour
2 tablespoons milk
 
Heat oven to 350°F. 


In large bowl, stir together oatmeal, 
1 1/3 cups flour, brown sugar and 2 teaspoons cinnamon. 
Cut in butter until mixture is crumbly. 
Press half the mixture into bottom of 13x9-inch glass baking dish; 
reserve remaining mixture for topping.
 
In large bowl, toss together all apple ingredients until apples are coated. 

Spread over crust.
 
Beat cream cheese and 1/2 cup sugar at medium speed until smooth. 

Add eggs, 2 tablespoons flour and milk; beat until combined. 
Spread over apple mixture; sprinkle with reserved oatmeal mixture.
 
Bake 40 to 45 minutes or until golden brown and apples are tender. 

Cool on wire rack.
